Every spring, for just a few weeks, the first leaves of the tea plant emerge after a long winter. Those first leaves - the shincha - hold everything the plant has built up throughout the year: sweeter, richer in umami and more vibrant in colour than anything harvested later.
The Okumidori cultivar grows on small family farms in the Wazuka region, Japan. Stone-ground. Shaded for four weeks before harvest to boost chlorophyll and L-theanine.
Why First Harvest?
The first harvest of the season, also known as shincha - yields the most delicate leaves with the richest flavour and highest concentration of L-theanine. At Namacha Matcha, we use only these top-grade leaves.
Storage
Store in an airtight container, away from light and heat. Once opened, consume within 4โ6 weeks for optimal flavour.

How to prepare
Preparing usucha
Sift
Sift 2g of matcha (approx. 1 tsp) into your bowl to prevent lumps.
Water
Add 60โ80ml of hot water at 70โ80ยฐC. Never boiling.
Whisk
Whisk in a rapid W-motion until a fine foam appears.
Savour
Take a moment. Hold the bowl with both hands. Breathe in. Enjoy.

Iโm very picky when it comes to matcha, but this exceeded my expectations. This matcha is perfect for lattes but also perfect as koicha or usucha. It has a well balanced profile with a strong umami taste (a bit seaweedy). 10/10 for me :)
