Description

Every spring, for a brief window of a few weeks, the first leaves of the tea plant emerge after a long winter. These are the ichibancha, first harvest. They carry everything the plant has built up all year: sweeter, more umami, more vivid in colour than anything picked later.

The Okumidori cultivar grows on small family farms in the Wazuka region of Japan. Stone-ground. Shade-grown for four weeks before harvest to increase chlorophyll and L-theanine. Sourced in small batches, directly from the farmer.

Why First Harvest?

Most matcha is blended from multiple harvests. Second and third harvest leaves are cheaper, more bitter, more astringent.

First harvest, Ichibancha, is picked once a year, early spring only. Sweeter. Smoother. The characteristic umami that makes ceremonial matcha worth drinking on its own.

After the first harvest, it's gone until next year.

We source nothing else.

Preparation

Usucha - Ceremonial (Straight)
Sift 2g matcha. Add 60–70 ml water at 75 °C. Whisk until frothy.

Latte
Sift 3g matcha. Add 30ml water at 75 °C, whisk. Pour over 80ml warm milk (or iced with cold milk).

Tip: water temperature matters more than you think. Too hot and the matcha turns bitter. 75°C is the sweet spot.

Storage
Keep Matcha cool and dark, preferably in the refrigerator, sealed tightly in our airtight container.

For best taste and freshness: consume within 1 year.
